Chinese Chicken Salad Recipe for Chicken Fingers by Hip Chick Farms

Yields1 Serving

 2 Baked HIP CHICK FARMS Chicken Fingers (Cut Into Thin Slices)
 0.50 head Green Cabbage (Thinly Sliced)
 0.50 head Purple Cabbage (Thinly Sliced)
 1 bunch of Scallions (Thinly Sliced)
 2 Carrots (Peeled and Grated)
 0.50 cup Toasted and Salted Cashews
 2 packages Ramen Noodles (Discard Seasoning Pack)
 2 tbsp Fresh Cilantro (Finely Chopped)
Dressing
 1 cup Vegetable Oil
 0.50 cup Rice Wine Vinegar
 2 tbsp Sesame Oil
 0.25 cup Mirin Rice Cooking Wine
 1 tsp Salt
 1 tsp White Pepper
 1 tsp Black Sesame Seeds

Mix together all ingredients of dressing. Set aside.

Break up Ramen Noodles by hand. Toast in oven until golden brown.

Combine Cabbage, Scallions, Carrots, Cilantro, Chicken, Ramen and Cashews into bowl.

Add Dressing and toss to coat.
